I am a doctoral researcher at Zhejiang University (ZJU), where my research focuses on understanding and improving sorghum starch characteristics. My research interests encompass the diversity of sorghum starch, structure-function relationships, and physicochemical properties. I am passionate about contributing to the fundamental knowledge of starch science and its practical applications. In my recent work, I authored a comprehensive review article titled "Sorghum starch: Composition, structure, functionality, and strategies for its improvement" published in Critical Reviews in Food Science and Food Safety (2025). This review synthesizes current understanding and future directions in sorghum starch research.
